1/3 cup organic coconut oil
3 very ripe bananas
3/4 cup pure maple syrup
3 cups organic rolled oats
1 tbs Forest Super Foods Maca powder (any colour)
1 tbs Forest Super Foods Cacao Powder
1 cup buckwheat groats or buckwheat hulled kernels
1 1/2 cups unsweetened coconut flakes
1/2 cup pumpkin seeds
2 teaspoons ground cinnamon
1/2 teaspoon fine sea salt
Preheat the oven to 180c. Place baking paper on two baking trays.
Melt coconut oil (if not already melted) over a low heat. Then add to a blender with banana, maple, maca and Cacao.
In another bowl combine the rest of the ingredients the oats, coconut, buckwheat, sunflower seeds, pumpkin seeds, cinnamon and salt. Add wet mixture and combine.
divide between the two baking sheets, and use the back of a spoon to press mixture down. Bake for around 15 mins or until lightly browned. then flip the granola over using a spatula, and place back in the oven until golden brown. Roughly another 20 mins.
Remove from the oven, allow to cool on the baking trays.
Can store in an airtight jar for up to a month.
