Ingredients:
- 1/2 cup hemp seeds
- 1/4 cup water
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 tablespoon nutritional yeast
- 1 teaspoon Dijon mustard
- 1/2 cup fresh mixed herbs (such as parsley, dill, chives, or basil), finely chopped
- Salt and pepper to taste
Method:
- In a blender or food processor, combine the hemp seeds, water, lemon juice, apple cider vinegar, minced garlic, nutritional yeast, and Dijon mustard.
- Blend the ingredients until smooth and creamy.
- Add the fresh mixed herbs to the blender and pulse a few times until the herbs are finely chopped and well incorporated into the dressing.
- Taste the dressing and season with salt and pepper as needed.
