Super Radicchio Salad

Light and refreshing with a delicious dressing that’s packed with healthy fats, this summer salad features an underrated vegetable… radicchio! 

Radicchio is a fantastic source of fibre, and is rich in vitamins, minerals, and antioxidants, making it a perfect lunch addition or healthy side.

Ingredients

For the Salad:

  • 6 Persian cucumbers, sliced into coins

  • 1 cup radicchio, chopped

  • 1/2 red onion finely, sliced

  • 1/2 cup parsley finely, chopped

  • 1 cup cherry tomatoes, halved

  • 2 avocados, chopped

  • Feta (optional)

For the Dressing:

  • 1/3 cup extra virgin olive oil

  • 1 lemon, juiced (you can use 2 lemons if you like your dressing extra tangy like I do)

  • 1 tbsp sumac

  • 1 tsp sea salt

  • 1/2 tsp black pepper

Instructions

Start by mixing the dressing ingredients. Next chop up the salad ingredients and add to a large bowl. Toss with dressing until combined.
