Light and refreshing with a delicious dressing that’s packed with healthy fats, this summer salad features an underrated vegetable… radicchio!
Radicchio is a fantastic source of fibre, and is rich in vitamins, minerals, and antioxidants, making it a perfect lunch addition or healthy side.
Ingredients
For the Salad:

6 Persian cucumbers, sliced into coins

1 cup radicchio, chopped

1/2 red onion finely, sliced

1/2 cup parsley finely, chopped

1 cup cherry tomatoes, halved

2 avocados, chopped

Feta (optional)
For the Dressing:

1/3 cup extra virgin olive oil

1 lemon, juiced (you can use 2 lemons if you like your dressing extra tangy like I do)

1 tbsp sumac
-
1 tsp sea salt
-
1/2 tsp black pepper
Instructions
Start by mixing the dressing ingredients. Next chop up the salad ingredients and add to a large bowl. Toss with dressing until combined.
