Ingredients:
1kg peeled, deseeded organic jap pumpkin, chopped
2 organic carrots, chopped
1 stalk celery chopped
1 large organic onion or leek, chopped
1 lt of organic vegetable stock or two organic stock cubs
Salt and pepper to taste
Dash of cream optional
Handful of parsley chopped
Method:
Place all ingredients in a pan and cook over a medium heat until softened. removed from heat and blend in batches, whole onion included. Blend till smooth
Serve garnished with hemp seeds and a dash of cream and freshly chopped parsley
