My favourite summertime salad has to be this mango salad. Light, refreshing and full of flavour, it’s the perfect dish to serve at barbecues, in tacos or alongside a simple fish dish. Mangoes are also high in antioxidants and a great source of vitamin c, magnesium and potassium.
Ingredients:
6 mangoes, ripe, peeled and thinly sliced
2 red capsicums thinly sliced
½ cup fresh basil, thinly sliced
½ cup fresh coriander, roughly chopped
½ small red onion, thinly sliced (optional)
Salad Dressing:
Zest of 1 lime
½ cup lime juice, freshly squeezed (about 2 limes)
4 tsp sugar
½ tsp salt extra virgin olive oil
Freshly ground pepper
Method:
Combine the dressing ingredients in a jar and shake till combined. Allow to sit for 10 minutes.
Meanwhile, combine salad ingredients in a bowl. Add dressing and toss to combine.
