Energy Boosting Bee Pollen Energy Balls

When the 3pm slump arrives, you’ll be glad to have these energy-boosting Bee Pollen Energy Balls on hand! Bee Pollen is an incredible ‘complete’ superfood that provides a source of slow-release, sustained energy, along with a dose of vitamins and antioxidants to give your body a boost when it needs it most.

Packed with plant-based protein and healthy fats, they’ll keep you satisfied until dinner too.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup shredded coconut
  • 2 tablespoons chia seeds
  • 2 tablespoons Western Australian Bee Pollen
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a large mixing bowl, combine rolled oats, almond butter, honey or maple syrup, shredded coconut, chia seeds, bee pollen, vanilla extract, and a pinch of salt. Stir until well combined.
  2. Place the mixture in the refrigerator for 15-30 minutes to firm up slightly.
  3. Once chilled, remove the mixture from the refrigerator and roll into small balls using your hands. This recipe will make approx. 10 balls.
  4. Place the bee pollen energy balls on a baking sheet lined with parchment paper. Optional: roll in more bee pollen!
  5. Chill the energy balls in the refrigerator for at least 1 hour to set.
  6. Once set, transfer the energy balls to an airtight container and store in the fridge until ready to enjoy.

 

Be careful of sellers who claim their Bee Pollen is Australian when it actually isn’t!
