  • 4 medium sweet potatoes
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 2 cups kale, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Drizzle of homemade hemp seed dressing


  1. Preheat the oven to 200.
  2. Wash the sweet potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
  3. While the sweet potatoes are baking, cook the quinoa. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped kale and sauté for 3-5 minutes, or until wilted. Season with salt and pepper to taste.
  5. Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides with a fork. Divide the cooked quinoa and sautéed kale among the sweet potatoes, spooning them into the center.
  6. Drizzle the hemp seed dressing over the stuffed sweet potatoes. Serve immediately and enjoy!
