Ingredients:
- 4 medium sweet potatoes
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 2 cups kale, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Drizzle of homemade hemp seed dressing
Method:
- Preheat the oven to 200.
- Wash the sweet potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
- While the sweet potatoes are baking, cook the quinoa. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
- In a skillet, heat the olive oil over medium heat. Add the chopped kale and sauté for 3-5 minutes, or until wilted. Season with salt and pepper to taste.
- Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides with a fork. Divide the cooked quinoa and sautéed kale among the sweet potatoes, spooning them into the center.
- Drizzle the hemp seed dressing over the stuffed sweet potatoes. Serve immediately and enjoy!
